It seems like everything has pith, from walnuts to ragweed. I can't figure out what good it does them. Why do plants have it and how is it useful to them?

From the Wikipedia article on Plant Pith:

Pith is composed of soft, spongy parenchyma cells, which store and transport nutrients throughout the plant.
